Wash the salmon well, pat dry, season with salt and sugar on both sides, rubbing it in well. Top with a few pieces of fresh dill. Wrap in heavy-duty silver foil, then saran wrap tightly. 2. Place into a pan, place a heavy object on top. Let cure for 48 hours, turning it over after 24 hours, and placing the heavy object back on top. 3. Once done, was well, and pat dry. Slice extremely thinly. 4. Place in the center of a large serving board, garnish with the diced vegetables on the sides. 5. In a food processor blend all the pesto ingredients until smooth. 6. Serve the pesto on the fish, or on the side. Boards, nowadays, are anything but boring. MAY 5, ‘25 // Questions & Answers from Rabbi Avigdor Miller zt”l’s Thursday Night Lecture Oy! So Hot Q. What is the purpose of humidity and heat? Making Work Arai and Learning Ikar Q. How can you make your work incidental (despite working eight hours a day) so that your learning should be the main part of your life? A. It’s a good question. And I’ll answer that by giving you an analogy. Here is a man who comes home and he has to go through the kitchen in order to go to the bathroom. And he tells his wife, “What? In this hot weather you’re cooking?” So she says, “Yes dear, I’m going to turn it off,” and she turns it off. When he comes out of the bathroom he says, “Is supper ready?” And she says no. And so, in September all the ripe red apples are out on the stands. How does an apple become red, juicy, and sweet? It’s only because Hashem turns on the heat. The summer is the kitchen that ripens these delicious fruits that we are going to eat all winter. Therefore, are we going to complain because of the good times that are waiting for us? A. If a person really means business, he’s going to utilize the spare time that’s available, and it’s remarkable how much time is available. Most people don’t work on Sundays; and they don’t work on Shabbos either. Now Shabbos is a glorious opportunity and it shouldn’t be wasted. In winter there’s a long Friday night; in summer there’s a long Shabbos afternoon. Now people who climb into their pajamas Shabbos after the seudah and climb out just for Minchah, are people who are committing suicide; they’re ruining their lives. Motzaei Shabbos is an opportunity, don’t just run around visiting relatives; forget about relatives. You have one relative you have to visit, that’s yourself. It’s not selfish, because life is only for the purpose of making something out of yourself. So you have Friday night, all day Shabbos; remember, Shabbos morning before davening should be utilized. Shabbos afternoon, Motzaei Shabbos. If you don’t work on Sundays, be a kollel man on Sundays. “Oh!” your wife will say, “at least one day a week you have to be home!” Answer is, say, “My dear, I am not in yeshivah now, yeshivah people are going full speed ahead every day of the week. I have one day and that one day I should waste?” So Sunday morning say goodbye to your family, take along lunch and spend the day learning; don’t go home until nighttime. Now, when Hashem sees “hamekabel alav ol Torah” (Pirkei Avos 3:5), a man takes upon himself the yoke of the Torah, he means business. You mean business? So Hashem says, “This man deserves more time,” so He’ll take off of him “ol malchus v’ol derech eretz” (ibid.) and things start happening. You’ll be amazed what will happen, some more opportunities will be presented to you to learn more and more. But a man who looks for things to do on Sunday… Motzaei Shabbos he’s busy? Sunday he’s busy, he has no time? So Hashem says, in your spare time you’re making yourself busy? Shabbos after davening you run to this kiddush, this bar mitzvah, that bar mitzvah, this aufruf, whenever you have a chance you go and sit till two o’clock eating and stuffing yourself and wasting time? If that’s the case, I’ll see that you’re kept busy all your life without any opportunity to achieve for yourself. So the first step is to make use of the time that you do have, and you have plenty of time that’s available. MAY 5, ‘25 // Best Breakfast Burritos A truly convenient way to incorporate a full breakfast (or lunch) in a wrap. Bursting with creamy and buttery potatoes, fluffy omelet, and zesty sun-dried tomato. Utterly delicious! INGREDIENTS: • 4 Whole wheat wraps • 1 Yukon gold potato, cut into small cubes • 1 Tbsp. butter • 1 Tomato, sliced in discs • ½ Cup frozen spinach, defrosted and drained • 4 Eggs, beaten • Shredded cheese • Schug • Salt and pepper, to taste • Paprika spice DIRECTIONS: 1. A night before you prepare the burritos, preheat the oven to 200°. Place the tomato discs on a lined cookie sheet and bake for around 6 hours until dried out. Refrigerate in an airtight container until ready to use. 2. Bring a small pot of saltwater to a boil and cook the potatoes for 7-10 minutes until tender. 3. In a Betty Crocker, or pan, heat the butter, add in the boiled potatoes, salt, pepper, and paprika. Cook until crispy on all sides. 4. Remove the potatoes from the Betty Crocker, add a bit of oil into the Betty Crocker, and cook the spinach for about 5 minutes, season with salt, add in the eggs and mix well with the spinach. 5. Top with the shredded cheese and sundried tomatoes, and fold in half, omelet-style. 6. Lay 2 wraps for each burrito, one on top of the other, in the center spread schug, place a layer of potatoes, then half of the omelete, fold the 2 sides of the wrap towards the center, and wrap up tightly. INGREDIENTS: • 4 Cups old-fashioned rolled oats • 2 Cups shredded coconut • 2 Cups sliced almonds • ¾ Cup vegetable oil • ½ Cup honey • 1 ½ Cups diced dried apricots • 1 Cup diced dried dates • 1 Cup diced dried mango • 1 Cup craisins • 1 Cup roasted and salted cashews, chopped DIRECTIONS: 1. Preheat the oven to 350°. 2. Toss the oats, coconut and almonds in a bowl. 3. In a plate, whisk together the oil and honey, pour over the oat mixture, mixing well. Pour unto a line baking sheet, bake for 45 minutes, mixing every 10-15 minutes. 4. Remove from the oven and allow to cool, stirring occasionally. Add the rest of the ingredients, mix. 5. INGREDIENTS: • 1 Quart low-fat plain yogurt • ¼ Cup Craisins • 1 ½ Pure vanilla extract • ¼ Cup honey • Zest of 1 fresh orange • 1 Cup freshly squeezed orange juice • Oranges and walnuts, for garnish DIRECTIONS: 1. Drain the yogurt very well, add the craisins, walnuts, vanilla, honey, and orange zest to taste. Add in the orange juice, starting with a half cup, adding until you reach the desired consistency. 2.
