Wash the salmon well, pat dry, season with salt and sugar on both sides, rubbing it in well. Top with a few pieces of fresh dill. Wrap in heavy-duty silver foil, then saran wrap tightly. 2. Place into a pan, place a heavy object on top. Let cure for 48 hours, turning it over after 24 hours, and placing the heavy object back on top. 3. Once done, was well, and pat dry. Slice extremely thinly. 4. Place in the center of a large serving board, garnish with the diced vegetables on the sides. 5. In a food processor blend all the pesto ingredients until smooth. 6. Serve the pesto on the fish, or on the side. Boards, nowadays, are anything but boring. During the first years of my on- the- job training, I thought that the whole point of Pesach cleaning was to afflict oneself in order to understand how it felt to be a slave in Mitzrayim. I attacked each crumb as if I was fighting a world war. With time I learned tricks to do the job better without AS much effort, then as my children multiplied, I learned that keeping all the areas within reasonable reach chometz free is also called Pesach cleaning. I left the ceilings and chandeliers, (and some years other things like windows or tool cabinets) to self-clean until spring, when cleaning ladies were more available. I listened to shiurim and halochos, where I was made aware of the differences between cleaning and Pesach cleaning. Everything else I learned from my cleaning ladies. From Chanukah on, cleaning ladies gradually develop celebrity status. They are so needed and wanted that some hapless women forego good friendships over who has the right to hire their cleaning lady. Women of every calibre, who normally walk with noses high, become desperately in need of their services. They swoon at their heels and beg any cleaning lady who can hold a mop in their hand, to relieve them from the physical strains of achieving a spic and span, and chometz free Pesach. It would be a historical narrative if I would chronicle all the home helpers in the past, who had entered my portals. Before Pesach I am so busy that I have neither time nor interest to focus on world affairs. I barely have time for myself. Yet, behind the soap suds I am updated on the location of the latest wars or chaos in the world when I employ the women who would rather clean private houses than live in those lands. My home is a source of employment to refugees and new immigrants ranging from Rwanda, the Philippines, Bulgaria, Hungary, Russia, Portugal, Poland, Mexico…. and am anticipating a new wave from Ukraine. Some of the cleaning ladies I hired, had a higher level of education than I. My home became a stopover for women who were professionals in their own countries who needed immediate employment until they would learn the language, or a trade before moving on. Some were satisfied to work as housekeepers. Through the I think I am a Pesach cleaning maven by now. Or am I? A CLEANING LADY ONCE UPON 100
