A stunning autumn side dish that is delicious and healthy. INGREDIENTS: • 4 Sweet Potatoes, cut Hasselback style • ¼ cup Olive Oil • 8 cubes Garlic • Salt and Pepper, to tase. • Dried Parsley flakes, for garnish DIRECTIONS: 1. Preheat the oven to 400°. 2. In a small bowl mix the olive oil, garlic, salt and pepper. Drizzle all over sweet potatoes. Then sprinkle with parsley flakes. 3. Bake for 30 minutes covered, and additional 15-20 minutes uncovered. 56
