JULY 16, ‘25 // A friend of mine kept complaining about constant stomach aches. It was clear something had to change. Like any caring Yiddishe mama, we tried to help by figuring out which foods might be causing discomfort. We stopped serving white bread and started baking homemade loaves with better ingredients. But the good bread didn’t stay in our kitchen for long — friends and relatives began asking to taste it, and one taste turned into many. More and more people came knocking, asking for more of what became known as Biener’s Bread. Baruch Hashem, what began as a small project turned into a growing bakery here in Canada, where we bake hundreds of fresh loaves every day. The word keeps spreading — even customers from the US are asking for it, and now they too can enjoy a wholesome, delicious whole wheat bread baked fresh for them. With appetite! P.S. The stomach aches? They were later traced back to lactose intolerance — but the good bread stayed, and people are still enjoying it to this day. Place into a pan, place a heavy object on top. Let cure for 48 hours, turning it over after 24 hours, and placing the heavy object back on top. 3. Once done, was well, and pat dry. Slice extremely thinly. 4. Place in the center of a large serving board, garnish with the diced vegetables on the sides. 5. In a food processor blend all the pesto ingredients until smooth. 6. Serve the pesto on the fish, or on the side. Boards, nowadays, are anything but boring. Place the cubed watermelon and chopped kiwi in a single layer on a parchment-lined tray and freeze for 4–6 hours or overnight, until fully frozen. 2. Add the frozen fruit to a high-speed blender or food processor along with the lime juice. Blend until smooth and creamy. You may need to pause and scrape down the sides a few times. If your blender needs a little help, you can add a splash of water or coconut water. 3. Give it a taste, if you want it a little sweeter, blend in 1–2 tablespoons of honey or maple syrup. 4. You can enjoy it immediately as a soft-servestyle sorbet or transfer it to a container and freeze for another 1–2 hours for a firmer texture. Scoop and serve! Garnish with fresh mint, kiwi slices, or a sprinkle of lime zest for a pretty presentation. TIP If you don’t finish what you prepared and need to refreeze the leftovers, let the sorbet sit out for 5–10 minutes before scooping so it softens. TIP Watermelon Kiwi Sorbet Choosing a Good One This part took me a while to figure out, but once you know what to look for, you’ll rarely get a dud: Look for the field spot. That’s the creamy yellow patch on the outside. A deep yellow spot means it ripened on the vine. If it’s white or pale, skip it. Knock on it. A ripe one should sound hollow, not dull. Check the weight. It should feel heavy for its size, that means it’s full of water. Look at the skin. You want it to be dull, not shiny, and free of major dents or cuts. The world’s heaviest watermelon weighed over 350 pounds! Can you have too much? Watermelon is full of goodness, but like anything, it’s possible to have too much, especially if you’re sensitive to sugar or have certain health concerns. It’s a high-glycemic fruit, so if you deal with blood sugar ups and downs, try pairing it with something like a handful of nuts or some hemp seeds to help balance it out. But honestly, for most people, a few cups a day is perfectly fine, and such a delicious way to stay cool and nourished during the summer. Watermelon is a great snack to give the kids as well, especially in the summer. You can cut it into triangle “pops” and leave the rind on so they can hold it like a handle, it’s fun, super hydrating, and keeps them happily munching for a while. Just keep an eye out for the seeds if they’re still little. I would stick to seedless varieties when serving it to toddlers to keep things easy. One of the reasons watermelon feels so right in summer is because it’s in season. Our bodies are naturally drawn to it when we need cooling, hydrating, easy-to-digest foods. When it’s out of season, I shift to warmer, grounding fruits and veggies like squash and root veggies. Don’t Toss the Rind or Seeds! Most people throw out the rind and spit the seeds, but both are actually edible and loaded with nutrients. The Rind The white part just under the green skin has fiber and L-citrulline too. You can pickle it, blend it into smoothies, or sauté it like zucchini. It’s a great way to use the whole fruit. The Seeds If you have the kind with black seeds, don’t toss them! Roast them like pumpkin seeds for a crunchy, high-protein snack. They’re full of magnesium and healthy fats. Technically, watermelon is both a fruit and a vegetable since it’s part of the same plant family as cucumbers and squash. The Rav said that Hakodosh Boruch Hu made fruit beautiful so that we should recognize His kindliness. Wouldn’t we be able to recognize Him even more if He also made potatoes beautiful? A. Is there a connection between the body and the soul? There’s a tremendous connection because the body influences the soul. Let’s say you have a body. So you sit your body down at the table and your wife gives you supper. That’s for your body. So you have to think, “My wife cooked a supper for me. It took her at least an hour. And it tastes good too! As a result I’m going to appreciate her. I’m grateful to her.” That’s a very great benefit for your soul. So because of your body, your soul is improving. Your wife puts out fresh laundry for you from time to time. She washed your laundry for you. It takes time to wash laundry and your body likes fresh clothing so you stop and think for a half minute: “I appreciate my wife.” So your soul changes. Because of your body, your soul changes. You sit down to breakfast. There’s bread on the table. You’re hungry. And you put the bread in your teeth and you chew it. Ah! A pleasure! “I love You Hashem because of the bread!” That makes a change in your soul. The entire change in your soul is only because of the body, and that’s why the body is so important. We’re grateful to the body and that’s why we have to take care of the body and appreciate it always. And when the time comes to say good bye to your body, when you’re leaving this world it’s a sad farewell because the body says “Poor me! I’m being put into the earth and you’re going to Gan Eden.” So you tell the poor body, “V’ene’eman atah lehachayos meisim. Trust in Hashem. Someday we’ll be reunited again. Don’t worry. It’s not forever – it’s only temporary. Au revoir but not goodbye. We’ll meet again.” That’s how you console the body and you should do it every day when you say vene’eman atah lehachayos meisim. “My poor body. You served me faithfully. I’m not going to forsake you forever – only temporarily. We’ll come back again to each other.” There’s a very great connection between the body and the neshama! A. This person wants to know why Hashem didn’t make potatoes more colorful. So here is a beautiful red potato with a touch of yellow too, and it’s so beautiful that immediately you take it and start chewing on it. You won’t recognize Hakodosh Boruch Hu for that. You’ll be holding your belly and saying, “Why did Hakodosh Boruch Hu tempt me for nothing?!” So all those fruit and vegetables that are not fit to eat right away, Hakodosh Boruch Hu makes them not colorful in order to engender patience. The bland color means, “Be patient.” It means don’t be in a hurry because it’s not good to eat them right away. But all those things that are pre-cooked on the tree and are ready to eat, they are beautiful. Now, sometime something is fit to eat, but it’s also not beautiful, like a watermelon. And the reason is because it’s a pity; if a beautiful watermelon was red on the outside or yellow, so you’ll cut into it right away and start eating it and the rest would rot away. So therefore Hakodosh Boruch Hu gives it a ‘patient’ color that doesn’t attract you right away. Only when the whole tribe gathers and you’re all squatting around your watermelon and then you decide to open it up, then everybody will eat his share and it won’t be wasted. So we have two reasons, two cases why the color is not attractive. Either the thing is not fit to eat now; it’s injurious to eat it now and the color warns you that you would only cause harm to yourself by eating it now. And the second is, if it’s too big for one person so the color causes you to be patient until the family gathers and then you can make the best use of it.
