Wash the salmon well, pat dry, season with salt and sugar on both sides, rubbing it in well. Top with a few pieces of fresh dill. Wrap in heavy-duty silver foil, then saran wrap tightly. 2. Place into a pan, place a heavy object on top. Let cure for 48 hours, turning it over after 24 hours, and placing the heavy object back on top. 3. Once done, was well, and pat dry. Slice extremely thinly. 4. Place in the center of a large serving board, garnish with the diced vegetables on the sides. 5. In a food processor blend all the pesto ingredients until smooth. 6. Serve the pesto on the fish, or on the side. Boards, nowadays, are anything but boring. Problem! Sanity? It’s summer—messy and wet. Are we getting dragged along on the slippery slope toward a cycle of overwhelm, or are we joining the children in the fun of the season? For many mothers, it doesn’t even seem like there’s a choice. Let’s explore some of the un-routine-like aspects of a summer at home. INGREDIENTS • 3 cups cubed watermelon (seedless or seeds removed) • 3 ripe kiwis, peeled and chopped • Juice of 1 lime • 1–2 tablespoons raw honey or maple syrup (optional, depending on how sweet your fruit is) If you ever want more tips, wellness ideas, or creative ways to use what’s in your fridge, I’d love to connect. Place the cubed watermelon and chopped kiwi in a single layer on a parchment-lined tray and freeze for 4–6 hours or overnight, until fully frozen. 2. Add the frozen fruit to a high-speed blender or food processor along with the lime juice. Blend until smooth and creamy. You may need to pause and scrape down the sides a few times. If your blender needs a little help, you can add a splash of water or coconut water. 3. Give it a taste, if you want it a little sweeter, blend in 1–2 tablespoons of honey or maple syrup. 4. You can enjoy it immediately as a soft-servestyle sorbet or transfer it to a container and freeze for another 1–2 hours for a firmer texture. Scoop and serve! Garnish with fresh mint, kiwi slices, or a sprinkle of lime zest for a pretty presentation. TIP If you don’t finish what you prepared and need to refreeze the leftovers, let the sorbet sit out for 5–10 minutes before scooping so it softens. TIP Watermelon Kiwi Sorbet Choosing a Good One This part took me a while to figure out, but once you know what to look for, you’ll rarely get a dud: Look for the field spot. That’s the creamy yellow patch on the outside. A deep yellow spot means it ripened on the vine. If it’s white or pale, skip it. Knock on it. A ripe one should sound hollow, not dull. Check the weight. It should feel heavy for its size, that means it’s full of water. Look at the skin. You want it to be dull, not shiny, and free of major dents or cuts. The world’s heaviest watermelon weighed over 350 pounds! Can you have too much? Watermelon is full of goodness, but like anything, it’s possible to have too much, especially if you’re sensitive to sugar or have certain health concerns. It’s a high-glycemic fruit, so if you deal with blood sugar ups and downs, try pairing it with something like a handful of nuts or some hemp seeds to help balance it out. But honestly, for most people, a few cups a day is perfectly fine, and such a delicious way to stay cool and nourished during the summer. Watermelon is a great snack to give the kids as well, especially in the summer. You can cut it into triangle “pops” and leave the rind on so they can hold it like a handle, it’s fun, super hydrating, and keeps them happily munching for a while. Just keep an eye out for the seeds if they’re still little. I would stick to seedless varieties when serving it to toddlers to keep things easy. One of the reasons watermelon feels so right in summer is because it’s in season. Our bodies are naturally drawn to it when we need cooling, hydrating, easy-to-digest foods. When it’s out of season, I shift to warmer, grounding fruits and veggies like squash and root veggies. Don’t Toss the Rind or Seeds! Most people throw out the rind and spit the seeds, but both are actually edible and loaded with nutrients. The Rind The white part just under the green skin has fiber and L-citrulline too. You can pickle it, blend it into smoothies, or sauté it like zucchini. It’s a great way to use the whole fruit. The Seeds If you have the kind with black seeds, don’t toss them! Roast them like pumpkin seeds for a crunchy, high-protein snack. They’re full of magnesium and healthy fats. Technically, watermelon is both a fruit and a vegetable since it’s part of the same plant family as cucumbers and squash. Should a parent let her child experience on her own, so that when she finds the truth she’ll be stronger? Torah vs. Sunlight Q. Why is the berachah of Yotzer Hame’oros longer than the berachah on the Torah? In what way is the subject of light more important than Torah? A. It’s too expensive to learn by experience. If you’re going to let a child fiddle around with a lit gas range, she won’t have a chance to learn from experience. There are people who allowed their children to learn from experience, but their children aren’t around anymore to use the experience. Therefore, you have to use your experience and transmit it to the child by means of words and by means of a strap. A strap is a very good conductor of experience. You learned that to run in the street, to play in the street is not conducive to good health, but a child doesn’t know that. When a child persists on running into the street, you are justified in being strict and chastising him; it’s the biggest hatzalah, you’re saving his life. When Hashem chastises us, He does the same thing; He transmits His “experience” to us too. Therefore, we can’t afford to let anybody experience anything; vicarious experience is the best way. I know a case of one rosh yeshivah who made a very big error; he still thinks he’s right. He said he allowed evolution to be taught in his high school. And when there was a complaint, he said, “Better let the boys come in contact with it now than on the outside.” He wanted to inoculate them. So if he would inoculate them with arguments against it, maybe…but he was inoculating them with arguments for evolution because the teachers were apikorsim. So what kind of talk is that? It’s just an excuse because he wanted to use the textbooks that he got for nothing. That’s his excuse; it’s only irresponsibility. We cannot let our children experiment, once a child gets hooked on bad things, then it’s almost goodbye. A. Derech eretz kadmah l’Torah. Derech eretz means, first be a mensch. If you didn’t learn how to be a mensch then you’re too raw and unfit for Torah. In order to be a mensch you have to appreciate the bri’ah. Bereishis barah Elokim comes first. Later, when they already ingrained this into our people, we became more and more aware of the great truths of Bereishis, and then we’re ready for Matan Torah. Therefore, in order for us to be ready for the berachah on Torah, that’s the berachah before Krias Shema, you must appreciate the me’oros. People fall asleep while saying Yotzer Ohr, when it comes to Ahavah Rabbah then they wake up. It’s a mistake. Of course, you should wake up; you should wake up earlier though. Yotzer Hame’oros, you have to recognize the Borei first, and you recognize the Borei through His bri’ah. “Yaducha Hashem kol maasecha — Your works praise You” (Tehillim 145:10), “Hashamayim mesaprim kevod Keil — the world speaks of Hashem” (ibid., 19:2). Once you’re aware of Hashem, now you’re ready to accept His Torah. Some people who come to study Torah and don’t have any emunah at all, it’s a pity. Of course, it’s better than nothing, but it’s a great pity. Therefore, Yotzer Hame’oros should be lengthy and concentrated on. The malachim say Kedushah in Yotzer Hame’oros, not in Ahavah Rabbah. Why do they say Kedushah? They are excited about the bri’ah. So we should also be excited about the bri’ah, in order that we should learn from the Yotzer, the greatness of the One who made everything! That’s important for us. JULY 9, ‘25 // Maple Walnut Streusel Loaf A moist, fragrant loaf swirled with maple-walnut streusel for the perfect Shabbos Morning bite. SPONGE CAKE BATTER: • 2 egg • 1 ½ cups sugar • ½ cup oil • 2 tablespoons vanilla sugar • 1 cup orange juice • 3 cups flour • 2 tablespoons baking powder • ½ teaspoon salt STREUSEL: • ½ cup brown sugar • 2 tablespoons oil • 2-3 tablespoons pure maple syrup • 3 tablespoons flour • 1 teaspoon cinnamon • ⅓ cup chopped walnuts DIRECTIONS: 1. Preheat oven to 350° and line your pan with parchment paper or muffin liners. You can grease with cooking spray as well. 2. In a mixer or food processor, beat the eggs until fluffy. Add sugar and mix well. 3. Add oil, vanilla sugar, and orange juice. Mix. 4. Add the remaining ingredients and mix until a smooth batter forms. 5. Pour half of the batter into your pan. 6. In a separate bowl, combine the streusel ingredients. 7. Sprinkle half of the streusel over the batter in the pan. Pour remaining batter over the streusel and sprinkle with the remaining streusel as a topping. 8. Bake for 50-60 minutes. Insert toothpick—if not clean, return to oven for a few more minutes. 92

Preheat oven to 350° and line your pan with parchment paper or muffin liners. You can grease with cooking spray as well. 2. In a mixer or food processor, beat the eggs until fluffy. CAKE BATTER: • 2 egg • 1 ½ cups sugar • ½ cup oil • 2 tablespoons vanilla sugar • 1 cup orange juice • 1 ½ tablespoons coffee, dissolved in 1 tablespoon boiling water • 3 cups plus 2 tablespoons flour • 2 tablespoons baking powder • ½ teaspoon salt • 1 cup real chocolate chips STREUSEL • 1/3 cup dark brown sugar • 3/4 cup flour • 2 teaspoons cinnamon • 2–3 tablespoons oil DIRECTIONS: 1. Preheat oven to 350° and line your pan with parchment paper or muffin liners. 2. In a mixer or food processor, beat the eggs until fluffy. Add sugar and beat well. 3. Add oil, vanilla sugar, orange juice, and dissolved coffee. Mix. 4. Add the remaining ingredients and mix until a smooth batter forms. Fold in the chocolate chips until evenly distributed. 5.
