Atlantic salmon, skin removed • 1 Cup sugar • 1 Cup salt • 1 Sprig fresh dill • 1 Jalapeno pepper, thinly sliced • 3 Colors of peppers, diced in small cubes PESTO: • 1 Container checked parsley • 1 Sprig fresh dill, plus more for garnish • 3 Cloves garlic • 1 Tbsp. lemon juice • ½ Cup olive oil • 1 Tsp. salt • Dash of black pepper • 2 Tbsp. pine nuts, optional DIRECTIONS: 1. Wash the salmon well, pat dry, season with salt and sugar on both sides, rubbing it in well. Top with a few pieces of fresh dill. Wrap in heavy-duty silver foil, then saran wrap tightly. 2. Place into a pan, place a heavy object on top. Let cure for 48 hours, turning it over after 24 hours, and placing the heavy object back on top. 3. Once done, was well, and pat dry. Slice extremely thinly. 4. Place in the center of a large serving board, garnish with the diced vegetables on the sides. 5. In a food processor blend all the pesto ingredients until smooth. 6. Serve the pesto on the fish, or on the side. Boards, nowadays, are anything but boring. JUNE 25, ‘25 // Questions & Answers from Rabbi Avigdor Miller zt”l’s Thursday Night Lecture On the Heat of Summer Q. What is the purpose of humidity and heat? Songs of the Months Q. You said last week that there’s no such a thing as bad weather. Is it a chisaron if a person enjoys a warm mild day more than a rainy day or a very hot day? A. It’s a good question and I’ll answer it by giving you an analogy. Here is a man who comes home and he has to go through the kitchen in order to go, let’s say to the bathroom. So he tells his wife, “What is this? It’s so hot in this kitchen!” So she says “I’m sorry dear. I’m going to turn the oven off.” She turns it off. Now, a few minutes later when he comes out of the bathroom, he says, “Is supper ready? She says, “No. I’m sorry but I had to turn the oven off.” And so in September all the ripe red apples will be out on the stands. How does an apple become red and juicy and sweet? It’s only because Hakadosh Baruch Hu turns on the heat. The summer is the kitchen that ripens these delicious fruits that we’re going to eat all winter. And therefore are we going to complain because of the good times that are waiting for us? Summer is the time when all the fun for the ensuing year is being prepared. Now that’s only one aspect of the heat. The truth is there’s much more to it because the climate is suited to the diet of the people. Every continent has its own diet – people don’t eat the same things – and therefore they have a certain climate that’s suited to them. Now, there are things that we don’t know yet, many facts of which we are ignorant, but some things we know already. We know for instance that sunlight when it strikes the skin creates a certain vitamin. It’s very important. Children who are deprived of sunlight are prone to develop rickets. There are other diseases. Of course being exposed to too much sunlight certainly is unhealthy. That’s why clothing is important for people to wear. We weren’t created to be without clothing. But the climate certainly is suited to our physical natures and as time goes on, we’re going to discover there are many benefits to the summertime heat. Now people who have a tendency to arthritis, they love the summer because the sun bakes their old bones and it bakes the pain out of their bones. In wintertime, they’re reminded of the good old days that they had last August when the sun was making things comfortable. Now they’re taking aspirins to make up for the sun. And so there are many compensations. Our knowledge of medicine today, although it made great leaps in the last seventy five years, but it’s nothing compared to what will be known in the next seventy five years. And so some day people will realize that the winter is good for us and the summer is good for us, and that each season brings blessings of its own. A. When a person enjoys a certain kind of weather he is justified; there’s nothing wrong with that. And not only is he justified but he is a wise man for appreciating it. Of course, if he understands that all weather is good — even though he may not enjoy it, but he understands that it’s a benefit for him, then he’s even wiser. The fact that a person enjoys spring time more than any other season doesn’t detract from the fact that he can understand that summer is very important. After all, spring-time is not the time when the apples are ripe and when the pears are ripe. In the summer is when they begin turning red. Their cheeks display a color which makes them more and more attractive as they become sweeter and softer. And therefore, despite the heat of summer, he’s able to appreciate it because of the benefit it provides. So the fact that one season is more beloved than others, doesn’t detract from the fact that you understand that all seasons are valuable. And so, if you’re a wise man then you learn to enjoy the summertime. Oh yes, the summer has many attractions. You know, there are songs about the summer. They sing about July and August. Then there’s a song about September; Nothing Like September Morning. Ahh, a September morning is pleasure. For every month of the year there are poems. And we have to learn to sing the songs of every month – not the gentile songs; you can sing your own songs. If we’ll sing all the songs, so we’ll start by singing songs in January – January is very good! The bracing cold of January is a blessing for the world. February? Ah mechayah! Walk outside in February, well dressed, and enjoy the brisk fresh air. March, April, May; every month has its blessing. Nissan, Iyar, Sivan, Tamuz, Av, Elul; every one of them is a time of special brochos. And the person who learns to appreciate them, that’s a שמח בחלקו. Creamy Tahini Dressing Ingredients: • ¼ cup mayonnaise • 4 tablespoons tahini paste • 2 tablespoons lemon juice • 2-3 tablespoons water (or more, until your desired consistency) • 1 clove garlic, crushed • 1 teaspoon salt • ½ teaspoon black pepper • 1 tablespoon Parsley flakes DIRECTIONS: 1. Whisk together all ingredients, adding water slowly until smooth and pourable. 2. Adjust seasoning to taste. Chill until ready to serve. Homemade Pita Chips Ingredients: • 2-3 pita breads • Cooking spray or 1-2 tablespoons oil • Salt and pepper, to taste • Garlic powder, to taste • Smoked paprika, to taste DIRECTIONS: 1. Preheat oven to 375°. 2. Cut pita into bite-size pieces (I used kitchen scissors). Spray with oil and desired seasoning. 3. Bake 10–12 minutes until golden and crispy. Serve it warm with pita for a satisfying Mediterranean-style dish. INGREDIENTS: • 1 large (unpeeled) eggplant, cut into small cubes • 3–4 Tbsp oil, for sauteing • 1 medium white onion, diced • 2–3 garlic cloves, crushed • 2 medium tomatoes, diced • 1 can (15 oz) chickpeas, drained and rinsed • 1 tablespoon tomato paste • 1 can (15 oz) tomato sauce or marinara sauce • ¼ tsp chili flakes, or to taste • Salt and black pepper, to taste • Optional garnish: chopped parsley, cilantro, or crumbled feta cheese DIRECTIONS: 1. Spread the eggplant cubes on a single layer in a baking sheet, sprinkle lightly with salt, and let sit for 10-15 minutes to remove the natural bitterness. 2. Meanwhile, heat the oil in a large saute pan. Add the onion and saute for 6-7 minutes until translucent. 3. Add the garlic and eggplant and cook, stirring, for 8-10 min on medium flame. 4. Add the tomatoes, chickpeas, spices, tomato paste. Stir and cook for another 2-3 minutes. 5. Add the tomato sauce. Let simmer for 5 minutes on low heat. 6.
