Atlantic salmon, skin removed • 1 Cup sugar • 1 Cup salt • 1 Sprig fresh dill • 1 Jalapeno pepper, thinly sliced • 3 Colors of peppers, diced in small cubes PESTO: • 1 Container checked parsley • 1 Sprig fresh dill, plus more for garnish • 3 Cloves garlic • 1 Tbsp. lemon juice • ½ Cup olive oil • 1 Tsp. salt • Dash of black pepper • 2 Tbsp. pine nuts, optional DIRECTIONS: 1. Wash the salmon well, pat dry, season with salt and sugar on both sides, rubbing it in well. Top with a few pieces of fresh dill. Wrap in heavy-duty silver foil, then saran wrap tightly. 2. Place into a pan, place a heavy object on top. Let cure for 48 hours, turning it over after 24 hours, and placing the heavy object back on top. 3. Once done, was well, and pat dry. Slice extremely thinly. 4. Place in the center of a large serving board, garnish with the diced vegetables on the sides. 5. In a food processor blend all the pesto ingredients until smooth. 6. Serve the pesto on the fish, or on the side. Boards, nowadays, are anything but boring. JUNE 18, ‘25 // Questions & Answers from Rabbi Avigdor Miller zt”l’s Thursday Night Lecture Derech Eretz Kadmah L’Torah Q. “What is meant by derech eretz kadmah l’Torah? A Midrash Rabbah in Vayikra states: “Derech eretz, which means the way to live properly, comes before the Torah” (Vayikra Rabbah 9:3) What does that mean? Torah vs. Chesed Q. How should one divide his time between Torah and doing chesed? A. We’re not going to wait until you learn how to live properly before you keep the Torah; it’ll take too long. What it means is, in history it came first, because Bereishis came before Shemos. The Torah was given in Shemos but in Bereishis we learned derech eretz. You know what derech eretz is? Derech eretz is, “Sarah shomaas — Sarah was listening” (Bereishis 18:10), that’s derech eretz. When Avraham was talking, Sarah didn’t stick her head out and say, “I know all about it, you said that to the guests who came yesterday.” Sarah was listening, that’s derech eretz. When Avraham saw wayfarers traveling on a hot day, he ran out in a terrible heat and he begged them to taste of his hospitality; that’s derech eretz. A stranger came with camels, an able-bodied man and said to Rivkah, “Give me a drink!” Did she say, “What do you think I am? Go yourself to the well!” No! She said, “Yes, my lord, sh’sai adoni, my master drink” (Bereishis 24:19), that’s derech eretz. And when she added, “Also your camels, let me give water also to your camels,” that’s derech eretz, that’s in the Torah. Yosef Hatzaddik was a prisoner and down in the dumps because he was in prison for nothing. When he saw two of his fellow prisoners were glum, he didn’t say, “What’s it my business, I have my own worries.” No! He said, “Madua panecha ro’im hayom — why do you look bad today?” (Bereishis 40:7). He interested himself in their welfare. That’s derech eretz. All these things and thousands like them are written in Bereishis to teach: this is the way to prepare for Torah, good character. Yaakov Avinu said that he almost gave his life to take care of Lavan’s flocks. By day and by night, in the heat and in the cold he didn’t forsake his charge. He was a loyal watchman. That’s derech eretz. Yaakov went back to look for pachim ketanim (Chullin 91a), little things that were left over on the other side of the river, because he was a treasurer for Hashem; he didn’t waste. Don’t waste, you can’t waste things, they all belong to Hashem, nothing is ours. That’s derech eretz. When Noach got drunk and he was lying on his bed naked, and his two older sons decided to cover him up. They took the blanket and walked backward so as not to see their father. That’s derech eretz. The whole Bereishis is derech eretz, and it’s put there before the giving of the Torah to tell us that’s how to prepare for the Torah. That’s what’s meant by derech eretz kadmah l’Torah. A. TThis is a very difficult question. It’s a big question that has occupied the minds of all great men. But there’s one klal in the Rambam. The Rambam said, when it’s a “mitzvah sh’efsher l’asos al yedei acherim,” if this mitzvah can be done by other people who are willing to do it, you can spend your time on Torah (Moed Katan 9a, quoted in Rambam, Hilchos Talmud Torah 3:4). Learn Torah. Let others who are willing to do the mitzvah of chesed do it themselves. However, if there is a gemilus chasadim that has to be done, and there’s nobody around to do it, so it depends on the necessity, on the urgency, because you cannot give away all your life just to help other people. One of the greatest forms of gemilus chesed to klal Yisrael is to produce lamdanim for them. And so, when you’re a yeshivah man, and you’re producing a talmid chacham out of yourself, you’re also doing a gemilus chesed. Now, whether you should go out on the streets and catch boys and girls and bring them into Torah, or spend your time studying Rishonim and Acharonim on the Gemara yourself, that’s a question that’s not easy to solve. And so we leave this to the roshei yeshivos or to individuals, each one according to his understanding. In general, however, when somebody else is willing to do the mitzvah, then let them do it, and you go back to your Gemara.
